Oh my goodness! You have got to try this Chia Seed Chocolate Mousse Pudding recipe. It is a creamy, dairy free, super indulgent chocolatey treat. I must admit that every time i’ve made this chia chocolate mousse, I have had to practise some self control. It is just too good! I am obsessed with layering my chia puddings like this Chia pudding recipe – layered with fruits also on the blog.

To achieve that extra creaminess and sweetness, I have layered this chia mousse with coconut cream and some frozen cherries (See recipe video below). So delicious. You can add any toppings you like. Fruits, nuts, whipped cream, caramel, go for it!

 

Chia seed Chocolate pudding

I wasn’t sure what to call it at first. Is it a mousse? or a pudding? Oh well.. we’ll just call it a Chia Seed Chocolate Mousse Pudding because it is something in between the two, and we just couldn’t decide. I just love that it is also Keto friendly and Gluten free. Now, Lets get to it, shall we.

Chia seeds are packed full of minerals and anti-oxidants, making them one of the healthiest foods on the planet. They are perfect for weightloss because they contain very little calories and a high amount of fibre and protein. The fibre helps speed up your metabolism and supports digestion. What’s more, it’s gluten free!

Chia Seed Chocolate Mousse Recipe

How to make Chia Seed Chocolate Mousse Pudding

It is so easy to make, just like most of my recipes. All you need is a blender. Simply throw in all the ingredients into a blender. Blend and leave to set in the fridge before serving.

Soaking the chia seeds in coconut milk for a couple of hours or overnight gives the seeds enough time to absorb the liquid. This also makes it easier to digest.

Not enough time to soak the seeds? Just add the seeds directly into the blender with all the other ingredients. Blend and leave to set for a minimum of 2 hours.

I have gone for a lighter mousse consistency here, if you would like it thick, add in another ⅓ cup of chia seed. Remember, Chia seeds can absorb up to 27 times their weight in water, so the more chia seeds you add in, the thicker the mousse gets.

If you’re on a keto diet, replace the 2 tbsp of Maple syrup with 2 tbsp of Erythritol for sweetness. I also recommend using full fat coconut milk for extra creaminess. I have found that the full fat canned milk is much creamier than the carton coconut milk.

Chia Seed Chocolate Mousse Pudding

Servings: 2

Ingredients

  • ½ Cup Chia Seeds (add another ⅓ cup of Chia seed for a thicker consistency)
  • 3 Cups Full Fat Coconut Milk
  • ¼ cup Cocoa Powder
  • 2 tbsp Erythritol (for Keto version) or Maple Syrup
  • 1 tsp Vanilla Extract
  • A handful of Frozen Cherries or Fruits of choice (Optional)
  • Chocolate shavings as toppings (Optional)
  • ½ cup Coconut cream (for whipping)

Instructions

To make the coconut whipped cream

  • Put a can of coconut milk in the fridge to allow the coconut cream separate from the milk
  • Scoop out the coconut cream into a bowl and whisk for about 5 minutes until you get a whipped cream consistency
  • Serve immediately

To make the chia chocolate mousse

  • Mix the coconut milk and chia seeds in a bowl, stirring to remove any clumps.
  • Leave the mixture in the fridge for a couple of hours or overnight gives the seeds enough time to absorb the liquid.
  • Transfer the chia milk mix into a blender, add in the cocoa powder, maple syrup or erythritol, and vanilla extract.
  • Blend until smooth.
  • Transfer into a bowl and leave to set in the fridge for at least 2 hours.
  • Serve with some coconut cream, chocolate shavings and frozen fruits (Optional)
  • Enjoy
