Protein Cocoa Baked Oats

The weather is getting chillier and i really can’t think of anything better than this hot chocolate baked oats to warm up your day. With some added protein powder, it makes such a delicious and nutritious treat. Throw in some marshmallows and scoop in melted dark chocolate for pure indulgence.

A serving of this cocoa baked oats is everything you’ll need to kick start your day. Gluten-free, vegan, protein packed and super easy to make. It really does tick all my boxes.

Cocoa Baked Oats

Ingredients for Cocoa Baked Oats

Ingredients for the Oat Batter
  • 1 Cup of Blended Rolled oats (Gluten-free) – use a food processor or blender to ground rolled oats until smooth or slightly coarse. If blending the rolled oats directly with other ingredients, use 1¼ cup of rolled oats.
  • 1 tbsp Cocoa powder
  • 1/3 Cup Protein Powder (Vegan, Vanilla flavour) – Vanilla, or any lightly flavoured protein powder works well in this recipe.
  • 1 tsp Baking Powder
  • 1 Cup Almond Milk – Or any other plant milk you have available. You can also use whole cow milk if not making this vegan.
  • 2 tbsp Maple Syrup – substitute with honey or 1½ tbsp of granulated sugar
Ingredients for the oats filling:
  • 50g Dark Chocolate (80-90% Cocoa) – Melted, vegan chocolate.
  • 1 tbsp Almond milk
  • Marshmallows (Vegan)

How to make this Hot Chocolate Baked Oats

To make these Cocoa Baked Oats, start by blending rolled oats in a food processor until smooth. Measure out a cup of blended oats to use in the recipe.

Mix all the dry ingredients together in a bowl until well combined. Pour in the maple syrup and Almond milk. Whisk together until well combined. Set aside the oat batter.

To make the oats filling, in a separate bowl melt the dark chocolate in the microwave for 10-15 seconds. Add in a tbsp of almond milk and mix to loosen it up.

Transfer the oat batter into ramekins. Add 2 tbsp of melted dark chocolate in the centre and some marshmallows. Making sure to push the marshmallows down into the batter. Add in another tablespoon of oat batter to cover the marshmallows.

Bake for 10-15 minutes at 180°C.

Ingredients

Ingredients for the Oats Batter

  • 1 Cup Blended Rolled oats (Gluten-free)
  • 1 tbsp Cocoa powder
  • ⅓ Cup Protein Powder
  • 1 tsp Baking Powder
  • 1 Cup Almond milk
  • 2 tbsp Maple Syrup

Ingredients for the chocolate filling

  • 50 grams Vegan Dark Chocolate (Melted, 80% – 90% Cocoa)
  • 1 tbsp Almond milk
  • Marshmallows (Vegan)

Instructions

  • Start by blending rolled oats in a food processor until smooth. Measure out a cup of blended oats to use in the recipe.
  • Mix the oats and the remaining dry ingredients for the oat batter together in a bowl until well combined.
  • Pour in the maple syrup and Almond milk. Whisk together and set aside the batter.
  • To make the oats filling – in a separate bowl, melt the dark chocolate in the microwave for 10-15 seconds. Add in a tbsp of almond milk and mix to loosen it up.
  • Transfer the oat batter into ramekins. Add 2 tbsp of melted dark chocolate in the centre and some marshmallows. Press the marshmallows into the centre of the batter.
  • Add in another tablespoon of oat batter to cover the marshmallows. Bake for 10-15 minutes at 180°C.
